corn off the cob.


Corn is in season and plentiful. So here's my recipe for yummy corn off the cob.

2-3 Tbsp butter
1 yellow pepper, diced
1 red pepper, diced
course kosher salt (or regular, whatever)
cracked pepper (or not, who cares)
6-8 cobs of corn
at least 2 chopped fresh herbs
(like basil, parsley, thyme, cilantro)

  • Husk the corn and put the cobs in a casserole dish.
  • Pour 1 cup water into the dish and cover tight with saran wrap.
  • Microwave the corn for 10 minutes, or until the it's soft when you poke it with a fork.
  • Carefully remove plastic wrap. Using a hot pad, lay corn on a towel to dry and cool off a bit.
  • Meanwhile...saute chopped peppers in hot butter until soft. Season liberally with salt and pepper.
  • Cut the corn off your cobs and add peppers and fresh herbs (it's not the same with dried herbs. honest). Stir to combine and add more salt & pepper (if you want).
  • Put the corn in a nice bowl or spread onto a cool platter with a few parsley leaves for garnish. YUM!

I love the taste of fresh corn... eating it on the cob isn't too bad... except it sticks in your teeth. But cut off the cob.... yum.
