wheat...again

A friend emailed me this article from the Associated Press this weekend: High Wheat Prices Raise Grocery Costs.

For our family of 7, we need 1050 lbs. of wheat for one year. You can buy a 25 lb bag of red wheat for $4.75 from your Family Home Storage Center. $6.25 a bag for white wheat. That's about $200 for red wheat, plus the price of buckets. For a year's supply.

"This is not an event," said Jeff Newey, manager of training and evaluation for Bishops Storehouse Services. "It is a process." The important thing is "to get word out to members encouraging them to prepare for adversity," he said.

So, we've got wheat, what do we do with it?

Here's a recipe we like:


Fried Whole Wheat
2 Tbsp oil
1 cup green pepper, diced
2 cups cooked whole kernel wheat
2 Tbsp soy sauce
2 eggs
2 cups coarsely chopped onion
2 cups left-over meat (ham, bacon, chicken, etc)
1/2 tsp salt

In a large skillet, saute onion & green pepper in oil. Then add meat & whole wheat. Add 2 eggs, beaten lightly, soy sauce, & salt. Stir until eggs are cooked.


to cook your whole kernel wheat:

Boil 1 cup water & 1/2 tsp salt. Add 1/2 cup wheat.
Bring back to a good rolling boil. Cover & turn heat to low.
Let sit for, well, a good long time. Like 4-6 hours.
You can cook a big amount in your crockpot (2 1/2 cups water to 1 cup wheat, on low for 6-8 hours).
Store what you don't use in the fridge.

I like wheat salads for lunch. Just add some chilled wheat to
chopped veggies with some Thousand Island Dressing.

Okay, I'm done with my wheat rant, again. I'm just learning, myself.
